Seedlip Asparagus Tonic
FOR 1
You will need:
tumbler, Y-peeler, muddler
1 stalk asparagus
ice cubes
25ml freshly squeezed lime juice
10ml Simple Herb Syrup made with rosemary (see here)
50ml Seedlip Garden 108
tonic water
a wedge of lime
an asparagus spear to garnish
Using a Y-peeler, shear the stalk of asparagus lengthways until you have a few shavings. Place these in the tumbler and press gently with a muddler.
Half fill your tumbler with ice and pour in the lime juice, rosemary syrup and Seedlip Garden. Stir gently to mix, then top up with tonic water. Squeeze the wedge of lime over the top, and garnish with the asparagus spear.
INSPIRATION Right when the day is softening into evening, I love sitting in the garden for a moment. It’s the perfect time to sip something delicious before cooking supper. This drink is green, fresh and aromatic – just the thing to lift the fatigue of a long week.
